This is a quick post (with no catchy title) to share a steak marinade (with no catchy name) I concocted last summer. I have had a couple of people ask for it, so here it is...
Ingredients:
Molasses, 2 tbs
Tamari, 2 tsp
Fresh ginger, 1 inch sliced
Olive Oil, 3 tbs
Garlic, 3-4 cloves, peeled and crushed
Freshly cracked pepper
I don't usually measure, just eyeball it, so those are approximations...you might want to vary it according to your tastes...I have also added fresh pineapple to the mix with yummy results.
I find this is at its best when marinated overnight. When I grill, I am really aware, as the sugar in the molasses can burn quickly. I generally slap it on a hot grill for a couple of minutes each side, until nicely browned, then move to indirect heat to finish. Don't move it too soon, or you will miss out on the wonderful caramelization that occurs....
