Seems like it was just yesterday when my apples were nothing more than a blossom in their parent's eye..or something like that...the point is, they were just beautiful blooms on the trees in my yard...
And now, they are buckets and buckets of apples...apples everywhere...so many apples, that I am now working on creative apple recipes. Here's the easiest to make, terrifically delicious "crustless" apple pie...I would have called it apple pie filling, but that reminds me of the canned apple pie fillings from the store...and I just don't find those appealing. At all. Seriously.
Soooo, I decided to call it Crustless Apple Pie. Who needs the hassle of making a crust, anyway? So, here we go, you need:
- 4 medium apples, cored, (you can peel if you like, I usually just leave it on)
- 1 Tbs Unsulphured Molasses
- 1 Tbs Brown Sugar
- 1/2 t of Cinnamon
- 1/2 inch of fresh ginger, sliced (no need to peel this, either)
- a quick zest of nutmeg
- 1 Tbs butter
- 1/3 C of Captain Morgan's Spiced Rum
Throw this all together in a pot. Bring to a light boil over medium low heat, reduce and let it simmer until the apples are soft, but definitely not mushy. Pick out the ginger slices and serve.

I can't believe I never thought of combining rum and apples. And spiced rum at that. Sounds wonderful!
